A company called Smule do some great applications. I would suggest for music you should look at Ocarina which is almost like an electronic pan pipe. From the same company Sonic Vox is a voice operated mic system which can pitch and echo your voice. Don’t forget that with sound operated apps you will either need an iPhone which has a speaker or connect a the iPod touch or iPhone to a computer speaker to the headphone socket.
Newtonica is a fantastic music player. Spin the visual ball and play a tube. Bloom is another application which is great for making sounds. Developed by Brian Eno (Roxy Music)it is a simple touch system for creating repeating sounds.
Digidrummer as the title would imply is a great drumming application. Lastly on the subject of sound iFart is the most popular sound application and helps students creat lots of rude sounds.

The best application for story telling is iMakeSounds it enables you to set up a series of instantly available sound effects for story telling. Lastly have a look at Pocket Guitar great fun!
Visual effects I use on the iPhone are of course limited to the small screen size but great fun. Flashlight is a simple torch feature, good for visual assessment. Pyro mania is a great fireworks app and Spawn is a wonderful visual touch application. KoiPond is a great visual fish pond and has a lovely interactive feature. If you want a visual testing app try Vision its not very good for visual assessment but fun to do.
